Foods such as margarine, cakes, cookies, candies, and doughnuts often contain partially or totally hydrogenated oils. This is also true of many oils sold in supermarkets; in order to prolong their shelf life, hydrogenated fats are used in many so-called cooking oils.
Another important fat classification, and one that's come under a good bit of scrutiny lately for being especially unhealthy, is trans fats. Most people's blood cells clump together because they live on a disease-inducing diet of fried foods, homogenized dairy fats, saturated animal fats, hydrogenated oils and other deadly foods. Doughnuts: Doughnuts contain hydrogenated oils, white flour, sugar, and acrylamides. Essentially, they're one of the worst cancer foods you can possibly eat. Reader's Digest calls doughnuts "disastrous" as a breakfast food, and many experts agree it's probably one of the worst ways to start the day.
French fries: Fries are made with hydrogenated oil and fried at high temperatures. Some chains even add sugar to their fry recipe to make them even more irresistible. Not only do they clog your arteries with saturated fat and trans fat, they also contain acrylamides. |

Population studies have shown that countries in which people eat a lot of fish have lower incidence of bipolar disorder. You have to go way down the aisle to the unpopular section -- often it's located near the kosher foods -- to find crackers such as Wasa Crackers, which are made without hydrogenated oils and are baked, not fried (at least in the U.S.). Unless they say, "no hydrogenated oils" right on the label, they contain it. Vegetable shortening, by the way, is pure hydrogenated oil. It is probably one of the single most toxic grocery products you can put in your body. And yet people are out there buying vegetable shortening by the bucket loads and baking cookies with it -- something I find absolutely appalling.

And how do you make hydrogenated oils? Well, you don't find them anywhere in nature -- you have to have a chemical processing facility to make hydrogenated oils. And you do it by bubbling hydrogen gas through liquid soybean oil or other types of oils, using a catalyst (in most cases the catalyst is nickel). So with this nickel and the bubbling of hydrogen gas, you get extra hydrogen atoms attached to the molecules in oil, which makes them solid at room temperature. Since they are solid at room temperature, they can be more easily used to make margarine products, or used in crackers and cookies. |

In reality, the product may be loaded with trans fats (found in hydrogenated oils), but the serving size has been reduced to a weight that might only be appropriate for feeding a ground squirrel, not a human being.
The next time you pick up a grocery product, checking out the "No. of servings" line in the Nutrition Facts box. I believe that sodium nitrite in processed meats is the next big food safety issue that's about to break into mainstream awareness. More and more consumers are suddenly aware that hot dogs promote cancer, or that bacon consumption is incredibly bad for your health.
